Something Personal: Mothers Day Gift {When Photographers Bake}

One of the wonderful benefits of being a parent is a special day a year when I get pampered with breakfast, hugs, and gifts.  I asked my husband the day before, “So,  what did Iain get me for Mother’s day?”  “I’m not telling you!” he responded. I really thought with the answer I could tell what he actually got me. I was wrong.
He stashed it in our garage, and told me not to go in there.  Of course my mind jumped around- not jewelry, maybe a jogging stroller? a bike? I had no idea that he bought me the thing I’ve been asking about for a little over 3 years.

I like to bake but Iain makes it really hard. I love my clingy child, but that means less chocolate chip cookies for my husband. If I can use something to save me time, I bake more.  When I was told to open my eyes, after having them covered, my jaw dropped.

So, to celebrate motherhood, I decided to make one of my favorite homemade desserts, Cake batter cookies.  I really love the Lemon mix. It’s a great hot weather cookie (recipe below)

Thank you, Iain. You are still the most amazing little kid I’ve ever met.  I’m extremely blessed to be your mom. Honestly, I love my stand mixer, but you’re the best gift I’ve ever received.

 

Cake Batter Cookies:
I’ve seen tons of recipe for these, but this was the easiest and most kitchens contain these ingredients.  They were delicious.
My favorite to use is the lemon but you can use any kind (mix chocolate, nuts, or candy)

1 box of cake mix (your favorite brand, your favorite flavor)
2 eggs
1/2 c of oil (I used canola, because that is what I had)

Mix ingredients, then drop tablespoon size balls of dough onto sheet. I use a stone because they stay golden and soft on the bottom but a sheet is fine, just make sure its non-stick or greased.

Bake at 350 degrees for 10-12 minutes.

Remove, enjoy!

I think next time I’m going to add some lemon or orange zest for a more tangy cookie- If you try it, let me know how it comes out!
